Cheese and Fruit Sandwich

(Serves 4)


8 slices bread (your choice)
2 tbsp softened butter
1/2 cup sugar free jam
4 oz thinly sliced cheese (your choice)
1 small apple, thinly sliced
2 tbsp sliced almonds or chopped pecan nuts


Spread butter on one side of each slice of bread and spread the other side of 4 of the bread slices with jam. Top jam side of bread slices with cheese, apple and nuts. Place remaining bread slices on top, butter side up.

Preheat a griddle pan and cook sandwiches for 5 to 6 minutes or until golden brown and cheese is melted. Turn over once.

Serve immediately!
