Quick Reuben Au Gratin
Ready in 20 - 25 minutes

Preheat oven to 465 degrees F.
Heat skillet over high heat. Add:
1 piece Granny Smith apple, peeled and chopped
Sprinkle apple with:
2 teaspoons brown sugar
Cook apple, stirring frequently, until its sugars are released. Combine in a bowl with:
3/4 pound deli corned beef, sliced into 1/2-inch cubes
1 can (14 ounces) sauerkraut, rinsed and drained
In a greased gratin dish, spread half of:
1 package (20 ounces) refrigerated mashed potatoes
Brush mashed potatoes with:
Dijon mustard
Sprinkle with 1/3 part of:
1-1/2 cups (2 ounces) already shredded Gruyere cheese
Over this, pour the corned beef mixture, spread evenly. Top with the remaining mashed potatoes. Finally sprinkle with the remaining 2/3 part cheese. Gratinate in the preheated oven until brown and cheese has melted. Remove from heat. Garnish with:
1 tablespoon chives, cut into 1/8 inch long
