Quick Mango Lady Finger Pudding
Ready in 15 minutes
6 – 8 servings
In a mixing bowl, combine:
1 can (14 ounces) sweetened condensed milk
1-1/2 cups fresh milk
1 tablespoon rum
Into this, gradually beat:
1 package (3.4 ounces) instant pudding mix
Continue beating until mixture becomes smooth. Chill for 5 minutes.
In a chilled mixing bowl, beat:
2 cups chilled heavy cream
Whip until stiff peaks form. Fold into the chilled pudding mixture. Incorporate thoroughly.
Evenly spread 1/3 of this mixture in an 8″ x 8″ glass baking dish. Put in 1/3 part of:
36 pieces lady finger
Top with 1/3 part of:
3 ripe mangoes, sliced into wedges
Repeat with the remaining ingredients twice to make a total of 3 layers. Serve chilled.
