Quick Bread Pudding

Ready in 30 minutes

Pre-heat oven to 229 deg F (165 deg C).

Caramelize:

1 cup white sugar

Arrange on a baking dish and set aside.

In a mixing bowl, combine:

1 big can evaporated milk
1 big can sweetened condensed milk
6 egg yolks

Whip until fluffy. Stir-in:

1/3 cup raisins
1/8 teaspoon cinnamon powder
zest of 1 lime

Add:

12 slices day-old bread

Pour mixture into dish with caramelized sugar. Arrange dish over tray with warm water. Poach in the oven or steam until firm.
