Quick Banana Nut Bread

Ready in 45 minutes
10 to 12 slices

Preheat oven to 350 deg F.

Grease a 9″ x 5″ x 3″ loaf pan. Line with parchment paper. Set aside.

Sift together:

1-1/2 cups all-purpose flour
1/2 teaspoon salt
3/4 teaspoon baking soda

Set aside the sifted dry ingredients.

In a mixing bowl, cream until fluffy:

1/2 cup butter
1 cup sugar

One at a time, add:

2 large eggs

Beat well after each addition.

Add the dry ingredients alternately with:

1/3 cup milk

Mix well. Stir-in:

2 large ripe bananas, mashed

Mix, and then add:

3/4 cup roughly-Chopped toasted cashew nuts

Bake in the preheated oven for 30 to 35 minutes. Cool on wire rack and slice into desired serving portions.
