Quick Mu-Shu

In a large 12-inch non-stick skillet, heat:
1 tablespoon peanut oil
Add in:
2 chicken breasts, boneless, skinless and sliced into strips
Saute chicken until done. Put:
1/4 cup Chinese marinade or sweet and sour sauce
3 tablespoons hoisin sauce
Continue cooking over low heat, stirring constantly. Stir-in:
2 eggwhites
Add:
2 cups cooked white rice
1 package (8 ounces) frozen broccoli florets, defrosted
Just before serving, in a microwave oven, warm:
8 flour tortillas (8-inch each)
Put each tortilla with the chicken filling. Roll up, burrito style, and serve.
