Quick Chicken Burritos
Ready in 20 minutes

In a large skillet over medium heat, heat:
2 tablespoons vegetable oil
Add:
1 pound chicken breast fillets, skinless and sliced into strips
Saute, regularly stirring for 3 to 5 minutes. Add in:
1 can (15 ounces) black beans, rinsed and drained
Continue to cook for 2 minutes, and then pour in the mixture of:
1 package taco seasoning mix
1 cup chicken stock
Bring to a quick boil and reduce heat to low. Simmer for 5 minutes or until mixture thickens. Adjust seasonings according to taste with:
fine salt
ground black pepper
While the chicken mixture thickens, wrap in microware-safe plastic wrap:
8 pieces (10-inch) flour tortillas
Heat on high for 1 minute. Spoon chicken mixture on tortillas, top with:
Monterey Jack cheese, grated
guacamole
iceburg lettuce strips
Fold the tortillas into buritos. Serve with sour cream if desired.
